Today’s Foodie Friday recipe comes from a fantastic little restaurant in Calgary, Alberta. The Coup is by far my favourite restaurant in Calgary. I think I love it so much because it’s a vegetarian restaurant that really delivers. The prices are reasonable and the food packs an amazing punch of flavour.

They serve their brunch items with the most sublime rosemary yam wedges. They’re baked and blissful.

Rosemary Yam Fries

Ingredients
serves 2

2 small yams
1 tsp freshly chopped rosemary
1/2 tsp salt
1/2 tsp pepper (or more if you like it spicy!)
1 tbsp vegetable oil

The how-to

1. Preheat the oven to 400˚F (200˚C)
2.Cut up the yams in to bite size pieces.
3. Mix all the ingredients together in a bowl.
4. Place on a baking sheet that’s lined with foil.
5. Bake for 35-40 minutes.
6. Enjoy!
